What you’ll need:
4 cups watermelon, chopped
6 cups tomato, chopped
8 basil leaves cut into ribbons
14 mint leaves
1/2 white onions thinly sliced
1/4 cup EVOO
2 tbsp white balsamic vinegar (if you don’t have then ACV works)
the juice 1/2 lemon 1 pinch salt, or to taste
Garnish with feta (about 1/2 cup)
