Watermelon Tomato Salad

This is the most perfect, refreshing dish for hot summer days! This salad combines juicy watermelon, ripe garden tomatoes, and tangy feta, creating a vibrant mix of sweet and savoury flavors that are sure to keep you cool. While it’s a delicious and hydrating option, adding a protein like grilled chicken breast transforms it into a complete and satisfying meal.

What you’ll need:

  • 4 cups watermelon, chopped

  • 6 cups tomato, chopped

  • 8 basil leaves cut into ribbons

  • 14 mint leaves

  • 1/2 white onions thinly sliced

  • 1/4 cup EVOO

  • 2 tbsp white balsamic vinegar (if you don’t have then ACV works)

  • the juice 1/2 lemon 1 pinch salt, or to taste

  • Garnish with feta (about 1/2 cup)

Directions (makes 6 servings):
