Baked Peach Crunch
Satisfy your sweet tooth with this high-protein baked peach crunch! I usually make this recipe with an apple but given the season, I made it with a peach! Eating with the seasons is a great way to keep your diet packed with inflammation reducing antioxidants. This dessert is naturally sweetened, and low in sugar, making it both nutritious and delicious. What you’ll need:
1 peach, cut in half with the pit removed
1 tsp butter
3 tbsp chopped pecans
1 tbsp yacon syrup
1/2 tsp cinnamon
1/8 tsp salt
1 1/2 scoops protein powder
3 tbsp coconut yogurt
Directions (makes 1 servings):
Preheat your oven to 350 degrees farenheit
Mix together your protein powder and yogurt and set aside
Combine your butter, chopped pecans, yacon, cinnamon and salt in a bowl
Cut your apple in half and remove the core
Spoon your pecan mixture onto each apple half and bake on a parchment lined baking sheet for 15-20 minutes covered. Remove your tinfoil and bake for another 10 minutes uncovered.
Remove from the oven and drizzle your protein icing on top. ENJOY!
