Baked Peach Crunch

Satisfy your sweet tooth with this high-protein baked peach crunch! I usually make this recipe with an apple but given the season, I made it with a peach! Eating with the seasons is a great way to keep your diet packed with inflammation reducing antioxidants. This dessert is naturally sweetened, and low in sugar, making it both nutritious and delicious. What you’ll need:

  • 1 peach, cut in half with the pit removed

  • 1 tsp butter

  • 3 tbsp chopped pecans

  • 1 tbsp yacon syrup

  • 1/2 tsp cinnamon

  • 1/8 tsp salt

  • 1 1/2 scoops protein powder

  • 3 tbsp coconut yogurt

Directions (makes 1 servings):

  1. Preheat your oven to 350 degrees farenheit

  2. Mix together your protein powder and yogurt and set aside

  3. Combine your butter, chopped pecans, yacon, cinnamon and salt in a bowl

  4. Cut your apple in half and remove the core

  5. Spoon your pecan mixture onto each apple half and bake on a parchment lined baking sheet for 15-20 minutes covered. Remove your tinfoil and bake for another 10 minutes uncovered.

  6. Remove from the oven and drizzle your protein icing on top. ENJOY!
