What you’ll need:

  • 1/4 cup unsweetened pumpkin puree

  • 3/4 cup unsweetened almond milk (or any other dairy-free milk)

  • 1 tbsp coconut cream (from a can)

  • 1 tablespoon almond butter (or any other nut butter)

  • 1 tablespoon chia seeds

  • 1 scoop protein powder

  • 1 teaspoon pumpkin pie spice

  • 1/4 teaspoon ground cinnamon

  • 1 tbsp yacon

  • 1 cup cauliflower rice

Directions (makes 1 serving):

  1. Add all ingredients to a blender.

  2. Blend on high until smooth and creamy.

  3. Taste and adjust sweetness if needed.
