Orange Chicken Sesame Slaw

This is a Gold Standard Approved take on a classic favourite: Orange Chicken Sesame Slaw! This vibrant dish combines juicy, chicken with a crisp, low-carb orange, sesame slaw. It's designed to keep you full and satisfied without the extra carbs. Each bite is the perfect mix of tangy, savoury, and crunchy goodness, perfect for a meal prepping or to bring to a summer barbecue.

For the salad:

  • 2 large chicken breasts, cubed

  • 5 cups shredded green cabbage

  • 1 orange, segmented

  • 1 avocado, diced or sliced

  • 1 cup sliced green onions

  • 1/4 cup chopped cilantro

  • 1 tsp salt

  • 1 tsp fresh cracked black pepper

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/4 cup slivered toasted almonds

  • 2 tbsp toasted sesame seeds

  • 2 tbsp olive oil

For the dressing:

  • 2 tbsp sesame

  • 1 tbsp coconut oil

  • 3 tbsp EVOO

  • 1.5 tbsp honey

  • 1/3 cup coconut aminos

  • 3 tbsp grated ginger

  • the zest of one orange

  • 1 tbsp orange juice

Directions (makes 4 servings):

  1. Into a large bowl, add add your diced chicken breast, garlic powder, onion powder, salt and black pepper. Toss to coat.

  2. Heat 2 tbsp of olive oil and cook your chicken over medium high heat. Roughly 8-10 minutes until chicken is cooked through.

  3. To make your dressing, combine all of your ingredients in a mason jar. Shake well to combine.

  4. To a large bowl, combine the rest of your salad ingredients. Add your cooked chicken and toss with your dressing. Enjoy!
