Orange Chicken Sesame Slaw
This is a Gold Standard Approved take on a classic favourite: Orange Chicken Sesame Slaw! This vibrant dish combines juicy, chicken with a crisp, low-carb orange, sesame slaw. It's designed to keep you full and satisfied without the extra carbs. Each bite is the perfect mix of tangy, savoury, and crunchy goodness, perfect for a meal prepping or to bring to a summer barbecue.
For the salad:
2 large chicken breasts, cubed
5 cups shredded green cabbage
1 orange, segmented
1 avocado, diced or sliced
1 cup sliced green onions
1/4 cup chopped cilantro
1 tsp salt
1 tsp fresh cracked black pepper
1 tsp garlic powder
1 tsp onion powder
1/4 cup slivered toasted almonds
2 tbsp toasted sesame seeds
2 tbsp olive oil
For the dressing:
2 tbsp sesame
1 tbsp coconut oil
3 tbsp EVOO
1.5 tbsp honey
1/3 cup coconut aminos
3 tbsp grated ginger
the zest of one orange
1 tbsp orange juice
Directions (makes 4 servings):
Into a large bowl, add add your diced chicken breast, garlic powder, onion powder, salt and black pepper. Toss to coat.
Heat 2 tbsp of olive oil and cook your chicken over medium high heat. Roughly 8-10 minutes until chicken is cooked through.
To make your dressing, combine all of your ingredients in a mason jar. Shake well to combine.
To a large bowl, combine the rest of your salad ingredients. Add your cooked chicken and toss with your dressing. Enjoy!
