Cookie Dough Bark

I’ve been seeing this viral cookie dough bark everywhere lately and I knew I had to make it Gold Standard Approved, which means making some swaps to increase the protein and ensure it was hormone friendly!

Ingredients:

  • 1 1/4 cup almond flour

  • 1/4 cup yacon syrup

  • 1/4 cup almond milk

  • 1/2 cup protein powder

  • 3 tbsp coconut oil, melted

  • 85% dark chocolate

Directions (makes 12 servings):

  1. Combine everything but the chocolate chips in a bowl until you have a dough like consistency

  2. Spread it evenly over a parchment lined baking tray and chill in the freezer for at least 15 minutes

  3. Melt your chocolate using a double boiler or in the microwave (but be careful not to burn it!)

  4. Once your cookie dough is chilled, pour your melted chocolate over it and set it back in the freezer to harden (approximately 20-30 minutes)

  5. Break into pieces once hardened and enjoy! *Best enjoyed right out of the fridge or freezer
