No-Bake Jammy Bites
These No-Bake Jammy PB&J Bites are the perfect guilt-free treat! Made with wholesome ingredients, they’re high in protein and fiber, naturally sweetened with yacon syrup, and completely refined sugar-free. The creamy almond butter layer, tangy chia jam, and rich dark chocolate create the ultimate flavor combo—like a PB&J, but better! Each bite is packed with healthy fats, plant-based protein, and gut-friendly fiber to keep you satisfied. Plus, they’re super easy to make—just mix, layer, and freeze. What you need for the almond butter layer:
½ cup almond butter
¼ cup coconut oil, melted
1½ tbsp yacon syrup
¼ scoop protein powder (@kaha)
Dash of salt
What you need for the jam layer:
1 cup raspberries
2 tbsp chia seeds
1 tsp yacon syrup
Juice of ½ lemon
Chocolate layer:
½ cup 85% dark chocolate, melted
Directions (makes 20 bites)
1. Prepare the Chia Jam
Blend the raspberries until smooth, then pour the puree into a small bowl.
Stir in chia seeds, yacon syrup, and lemon juice.
Place in the fridge for 10–15 minutes to thicken while preparing the other layers.
2. Make the Almond Butter Layer
In a mixing bowl, combine almond butter, melted coconut oil, yacon syrup, protein powder, and salt.
Stir until smooth and well incorporated.
3. Melt the Chocolate
Using a double boiler, melt the dark chocolate until smooth.
If needed, add a small amount of coconut oil to help with melting.
4. Assemble the Bites
Using a silicone mold, start by adding a layer of the almond butter mixture.
Spoon a small amount of chia jam on top.
Finish with a layer of melted dark chocolate.
Repeat until all 20 bites are assembled.
5. Freeze & Enjoy
Place the mold in the freezer for at least 2 hours until fully set.
Once firm, pop the bites out and enjoy! Store in the fridge or freezer for a quick, protein-packed snack anytime.
