High Protein Nutty Truffles

My High-Protein Nutty Truffles are not only delicious but also hormone-friendly, low in sugar, and sweetened with yacon syrup for a natural, blood sugar-friendly boost. With minimal ingredients and a rich nutty flavor, these clusters are packed with healthy fats and protein to support balanced hormones and keep your energy levels steady throughout the day. Perfect for a guilt-free snack that nourishes your body from the inside out!

What you’ll need:

  • 1/2 cup almond flour

  • 1/2 cup yacon syrup

  • 1/2 cup hazelnut butter

  • 1/4 cup protein powder

  • 1 tsp vanilla extract

  • 20 whole hazelnuts

For the sauce:

  • 130g 85% dark chocolate

  • 1/2 cup chopped roasted hazelnuts

Directions (makes 20 clusters):

  1. Mix your almond flour, yacon syrup, hazelnut butter, protein powder and vanilla extract in a bowl. Place 1 whole hazelnut in the middle of each mold and pour your mixture overtop.

  2. Freeze for 2-hours until solid.

  3. In the meantime roast your hazelnuts. Let cool before rolling them in a cloth to remove the skins. Chop into pieces.

  4. Melt your dark chocolate and once melted add in chopped your hazelnuts. Dip each frozen cup into your chocolate hazelnut coating. Freeze again to allow them to set and that’s it. ENJOY!
