Golden Gut Soup

Say hello to your new go-to soup for cozy, cold-weather days: Golden Gut Soup! Packed with nutrient-dense ingredients like chicken, ginger, turmeric, sweet potato, kale, and cauliflower, this comforting bowl is a powerhouse for your gut and hormone health.

Ginger and turmeric work together to reduce inflammation and support digestion, while the fiber from sweet potatoes and kale helps feed your good gut bacteria. Plus, this soup is loaded with immune-boosting nutrients to help you stay strong and healthy all season long.

What you’ll need:

  • 2 lbs boneless, skinless chicken breast

  • 3 ribs of celery, chopped

  • 4 cloves of garlic, minced

  • 1 small onion, chopped

  • 1.5 tbsp fresh minced ginger

  • 1 tbsp fresh minced turmeric

  • 1 sweet potato, chopped

  • 2 sprigs of thyme

  • 1 bay leaf

  • 6 cups bone broth

  • 2 cups cauliflower rice

  • 1 head of kale, chopped

  • 1 cup full fat coconut milk

  • 2 tbsp lemon juice

  • salt and pepper to taste

Directions (makes 6-8 servings)

  1.   First, you'll brown your chicken breasts or thighs in the same pot that you'll be making the soup in. You don't want to cook them all the way through, but searing will help you build flavor.

  2.   Once you remove the chicken, you'll saute the onions, garlic, and celery until they are just tender.

  3.   Next, you'll quickly saute the ginger, and turmeric then add the chicken back to the pot along with the sweet potatoes, broth, and seasonings. Bring to a boil then Simmer for 30 minutes, until the chicken shreds easily with a fork and the sweet potatoes are fully cooked.

  4.   Stir in the coconut milk, cauliflower rice and kale.and let it cook for 2-3 minutes, until the kale turns bright green, then turn off the heat.

  5.   Finally, squeeze in the juice of a lemon and then taste for seasoning, and enjoy!
