High Protein Apple Pancakes

What you’ll need:

  • 1 honey crisp apple, cored and sliced into rounds

  • 4 eggs

  • 1 1/2 cup almond flour

  • 1/2 cup protein powder

  • 2 tbsp yacon syrup

  • 1 tsp cinnamon

  • 1/2 tsp salt

  • 1 1/2 tsp baking powder

  • 3 tbsp of coconut oil for pan frying

Directions (makes 6-8 pancakes)

  1. Core your apple and cut into 1/2 inch thick rounds.

  2. Par-boil your apple rounds. In a pan bring water to a boil once boiling drop in apple rounds. Boil for 4 mins. remove and place on a paper towel to absorb the water. Set aside. This is to make sure the apple are soft in the pancake. drain water from the pan.

  3. Add all other ingredients to a bowl and wish together until smooth.

  4. Add some coconut oil to pan and heat off medium high. 

  5. Dip your soft apple rounds into your batter and fry on each side until golden brown, about 1 minute on each side. Continue until all are coated and cooked.

  6. Best served hot with a drizzle of yacon and sprinkle of cinnamon. ENJOY!
