Chickpea Blondies

When life gives your chickpeas, you make chickpea blondies! These blondies are not only delicious but also packed with protein to fuel your day. Adding protein to your diet helps with muscle repair, keeps you feeling full longer, and supports overall health. Plus, we've kept the sugar content low but using prebiotic rich yacon syrup. Perfect for a post-workout treat or a healthy snack on-the-go.

Ingredients:

  • 1 cup chickpeas

  • 1/3 cup yacon

  • 1/3 cup almond butter

  • 1/4 cup almond flour

  • 1/2 cup hemp hearts

  • 1/4 cup protein powder

  • 3 tbsp unsweetened almond milk

  • 1 egg

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp vanilla extract

  • a good pinch of salt

  • 1/2 cup dark chocolate chips

Directions (makes 9 servings):

  1. Preheat your oven to 350 degrees F

  2. Blend all of your ingredients except for the chocolate chips until smooth.

  3. Fold in your chocolate chips and pour into a parchment 9x9” brownie pan.

  4. Bake for 25-30 minutes until the centre comes out clean when poked with a knife.

  5. Allow it to cool completely before cutting and serving.
