Asian Asparagus Salad

High protein, low carb summer salad of your dreams! The easiest and tastiest way to switch up your recipes is by eating with the seasons. That's why I picked up this asparagus! Paired with some freshly chopped herbs, sliced almonds and of course protein. You could add any cooked protein that you like but I went with roasted chicken breast. Tossed in the most delicious sweet and spicy ginger dressing - this summer salad is going to be a staple all season long!

What you'll need for the salad:

  • 522g chicken breasts

  • 1½ pounds medium asparagus, chopped into 1 inch pieces

  • 4 scallions, finely sliced (about ½ cup)

  • ¼ cup fresh chopped cilantro

  • 1/3 cup fresh chopped mint

  • 2 tablespoons sesame seeds

  • ¾ cup sliced almonds

  • Salt, to taste 

For the dressing:

  • 2 tablespoons rice wine vinegar

  • 2 tablespoons avocado oil

  • 2 tablespoons yacon syrup

  • 1 tablespoon coconut aminos

  • 1 tablespoon fresh lime juice, from 1 lime

  • 2 teaspoons Asian/toasted sesame oil

  • 1 tablespoon grated fresh ginger

  • 2 clove garlic, minced

  • 1 jalapeño pepper, ribs and seeds removed, finely diced

Directions (makes 6 servings)

  1. Combine all of your salad ingredients in a large bowl.

  2. Whisk together your salad dressing ingredients and pour over top your salad.

  3. Toss to combine and enjoy!
