Summer Broccoli Salad

What you'll need for the salad:

  • 3 chicken breasts, chopped

  • 6 cups raw broccoli florets diced into 4 inch pieces

  • 1/2 cup of red onion

  • diced 1 green apple

  • chopped 1/3 cup walnuts, chopped

  • 1/4 cup sunflower seeds

  • 1/4 cup nutritional yeast (optional)

For the dressing:

  • 2 raw egg yolks

  • The juice of 1 1/2 lemons

  • 1 tsp dijon

  • 2 tsp honey

  • 1 tsp salt

  • 1/4 cup avocado oil

  • 1/3 cup coconut yogurt

Directions (makes 6 servings):

  1. Chop and dice all of your salad ingredients and combine in a bowl.

  2. Add all of your salad dressing ingredients except for the avocado oil and coconut yogurt to a blender and blend on high. Slowly add the oil to the blender while blending to incorporate.

  3. Dress your salad with your dressing as well as the coconut yogurt. Toss to combine and enjoy!
