Cucumber Salad

This is my take on the viral cucumber salad, but you know I had to make it hormone and gut friendly!

What you’ll need:

  • 1 whole cucumber

  • The juice of 1/2 a lemon

  • 2 tbs sheep kefir

  • 1/4 cup feta cheese

  • Roughly 2 tbsp of freshly chopped mint

  • Salt to taste

Directions (makes 1 serving):

  1. Thinly slice your cucumbers and add to a bowl.

  2. Top with lemon juice, sheep kefir, crumbled feta, mint and salt. Cover and shake to combine.

  3. Feel free to let the flavours mix and mingle by letting it sit for 30 minutes or dive right in!
