Tangy Shrimp Salad

My tangy shrimp salad is high in protein, low in carbs, and perfect for supporting your hormones and energy levels! Packed with nutrient-rich ingredients like shrimp for lean protein, avocado for healthy fats, and a medley of fresh veggies for a delicious crunch. What you’ll need:

  • 1lb shrimp, cooked

  • 1 avocado chopped

  • small pint of cherry tomatoes

  • 1 cucumber, chopped

  • 2 stalks celery, chopped

  • 1/4 cup parsley, chopped

  • 4 cloves garlic, minced

  • 1/2 cup green onion, chopped

  • 3 tbsp EVOO

  • 1 lemon

  • 1 tsp salt

  • 1/4 tsp pepper

Directions (makes 4 servings):

  1. Cook your shrimp and set aside to cool.

  2. Chop all of your veggies and combine in a bowl with your cooked and cooled shrimp.

  3. Add your parsley, green onions, EVOO, the juice of your lemon, salt and pepper. Toss to combine and taste and adjust with more salt as needed. That’s it!
