What you’ll need:
2 cups almond flour
1/2 tsp baking soda
1/4 cup coconut oil
1/4 cup maple syrup
1 egg
1/2 cup protein powder
1/8 tsp salt
1/2 tsp almond extract
1/2 tsp orange extract
1/3 cup 85% dark chocolate
Directions (makes 20 cookies)
Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
In a bowl, combine everything except for the dark chocolate.
Portion your batter into balls roughly 2 tbsp in size and place them on your baking sheet. Press down on them slightly to flatten. Leave at least 3 inches of room between each cookie as they’ll spread.
Bake for 10-12 minutes or until golden brown.
Let them cook on a wire rack for at least 10 minutes.
Melt your dark chocolate in a double boiler or in 30 second intervals in the microwave.
Drizzle your melted chocolate onto the cookies and refrigerate for about 15 minutes until the chocolate has solidified. That’s it, enjoy!
