Loaded Tex Mex Sliders

My loaded Tex-Mex Sliders are the perfect flavourful twist on a classic favourite! Instead of traditional buns, you'll use sweet potato slices to keep these sliders low-carb and high-protein. Packed with vibrant Tex Mex flavours, these sliders are a delicious and healthy option for your next meal. Perfect for anyone looking to enjoy a tasty dish without compromising on nutrition!

What you'll need for the meat:

  • 1.5 lbs ground beef

  • 1 egg

  • 1/4 cup almond flour

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp chipotle

  • 1/4 tsp smoked paprika

  • 1/2 tsp salt

  • 2 sweet potatoes sliced into rounds

For the guac:

  • 2 avocados

  • Juice of 2 limes

  • 2-3 cloves garlic

For the chipotle ranch:

  • 1/4 cup Yoggu coconut yogurt

  • 1/4 cup avocado mayo

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp chipotle

  • 1/4 tsp smoked paprika

  • 1/2 tsp salt

Directions (makes 12 sliders)

  1. Preheat your oven to 425 degrees.

  2. To make your sliders, cut your sweet potato into 1/2 inch rounds. Brush a small amount of avocado oil on both sides and place them on a baking sheet lined with parchment paper. Bake for roughly 15 minutes, flip, and continue baking for another 10 minutes until cooked through and slightly brown.

  3. While your sliders are baking, combine all of your burger ingredients in a mixing bowl and form into 12 small patties.

  4. Cook over medium high heat in a large skillet, about 2-3 minutes per side or until you’ve reached your desired doneness.

  5. Make your guac and chipotle ranch.

  6. Assemble your sliders by placing your patties on top of your sweet potato rounds. Top with a dollop of guacamole and a drizzle of chipotle ranch. Serve immediately and ENJOY!
