Edamame Crunch Salad

Say goodbye to boring summer salads! This edamame crunch salad is packed with protein and fibre to keep your hormones happy, digestion at its finest and hunger at bay. 

What You’ll Need:

  • 1 lb shredded chicken

  • 3 cups shredded red cabbage

  • 1 cup edamame

  • 1 red bell pepper, diced

  • 1 cup shredded carrots

  • ¾ cup almond, chopped 

  • ½ cup chopped green onions

  • ¼ cup chopped cilantro

  • 1/4 hemp hearts

For The Dressing:

  • ½ cup smooth almond butter

  • ¼ cup coconut aminos

  • 1 lime, juiced

  • 3 tbsp rice vinegar

  • 3 tbsp water

  • 1 tbsp yacon syrup

  • Red pepper flakes

Directions (makes 8 servings)

  1. Add all of the salad ingredients to a bowl, drizzle the dressing on top & toss to mix. Chill for 10 minutes (or more) before serving for best flavour and ENJOY!
