What you’ll need:
4 large eggs
1/4 cup lemon juice
3 tbsp honey
1/4 cup coconut oil, softened
1/4 cup almond milk
1 tsp vanilla extract
2 cups almond flour
2 scoops protein powder
2 bags Earl grey tea leaves
1/4 tsp salt
Zest of 1 lemon
1/2 tsp baking soda
For the glaze (optional)
1/4 cup almond milk
3/4 cup low carb icing sugar @swerve
1 bag earl grey tea leaves
Directions (makes 16 servings)
Preheat oven to 350°F. Line a 9 “×4” loaf pan with parchment. Set aside.
Crack the eggs into a bowl and beat well.
Add the lemon juice, honey, coconut oil, almond milk and vanilla extract. Mix until well combined.
Add in the almond flour, protein powder, salt, zest, tea and baking soda. Mix until well combined.
Pour the batter evenly into your prepared loaf pan.
Bake in the oven for 45-50 mins, or until golden brown and a toothpick comes out clean.
Remove and let cool completely before glazing and slicing.
