What you’ll need:
2 tbsp Olive oil
1 medium Onion (diced)
1 carrot chopped
3 ribs of celery, chopped
4 cloves Garlic (minced)
1 tbsp Fresh ginger (minced)
1/2 cup Bell peppers (diced)
1 tsp Italian seasoning (optional)
1/4 tsp Red pepper flakes (optional)
1 tsp Sea salt
1/2 tsp Black pepper
1 lb Boneless skinless chicken breasts
8 cups Chicken broth, reduced sodium
1 cup Broccoli (cut into florets)
2 cup Cauliflower rice (cut into florets)
2 tbsp Lemon juice
Directions (makes 6 servings)
Heat the olive oil in a dutch oven over medium-high heat.
Sear each side of chicken until golden brown and set off to the side.
Add the onion, celery, carrot, garlic, and ginger. Sauté for 3-4 minutes, until the garlic is fragrant and the onions are translucent.
Add the bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper. Cook for 3 more minutes.
Add the chicken breasts and chicken broth. Simmer for 20 minutes.
Remove the chicken breasts from the pot and shred using two forks. Add the shredded chicken back to the pot.
Add the broccoli and cauliflower florets. Simmer for 10 more minutes, until the cauliflower and broccoli are tender. Serve and enjoy!
