Chocolatey Almond Balls

These energy balls are easy to make, perfect for meal prep, and designed to help keep you full and satisfied, whether you need a quick breakfast or a pre-workout snack. What you’ll need:
1/2 cup of almond flour
1/4 cup coconut flour
1/2 cup protein powder
1/4 cup almond butter
2 tbsp cacao nibs
100 ml nut milk
1/4 tsp almond extract
2 tbsp yacon
85% dark chocolate, melted
Sea salt for topping
Directions (makes 20 servings)
Add all ingredients for the better to a bowl and mix until well combined.
Roll into 20 balls and set in the freezer (note that the batter is sticky and you might need to wash your hands in between rolling every five balls or so)
Let the balls chill in the freezer for about 10 minutes.
In the meantime, melt your chocolate. I added 1/8 tsp of almond extract to my melted chocolate to help elevate the flavour even more. Note: you might need to use a little bit of coconut oil to help melt down your chocolate.
Once your balls are set, dip each ball in your chocolate coating and top with a sprinkle of sea salt. Set them back in the fridge or freezer to harden for a few more minutes.
