Cabbage Roll Soup

What you’ll need:

  • 1 tbsp avocado oil or ghee

  • ½ onion, diced

  • 4 cloves minced garlic

  • 1.5 lbs ground beef

  • 3 cups green cabbage, chopped

  • 24 oz tomato puree, I like Muttie brand

  • 2 cups frozen cauliflower rice

  • 4 cups beef broth, I like Kettle & Fire brand

  • 1 tsp salt, + more to taste

  • 1 tbsp Italian seasoning

  • 2 tsp red pepper flakes

  • Garnish with chopped parsley and pecorino Romano cheese if desired

Directions (makes 6 servings):

  1. In a large dutch oven or pot, add oil, onion, and garlic over medium high heat until fragrant. Add in the ground beef and stir 3-5 minutes until browned and cooked through. 

  2. Add in tomato puree and let simmer on low for 10 mins.

  3. Add in the remaining ingredients and bring to a boil over medium high heat. Reduce heat to medium and simmer for 15-20 minutes or until cabbage is tender and cauliflower rice is cooked through.
