Cabbage Roll Soup

What you’ll need:
1 tbsp avocado oil or ghee
½ onion, diced
4 cloves minced garlic
1.5 lbs ground beef
3 cups green cabbage, chopped
24 oz tomato puree, I like Muttie brand
2 cups frozen cauliflower rice
4 cups beef broth, I like Kettle & Fire brand
1 tsp salt, + more to taste
1 tbsp Italian seasoning
2 tsp red pepper flakes
Garnish with chopped parsley and pecorino Romano cheese if desired
Directions (makes 6 servings):
In a large dutch oven or pot, add oil, onion, and garlic over medium high heat until fragrant. Add in the ground beef and stir 3-5 minutes until browned and cooked through.
Add in tomato puree and let simmer on low for 10 mins.
Add in the remaining ingredients and bring to a boil over medium high heat. Reduce heat to medium and simmer for 15-20 minutes or until cabbage is tender and cauliflower rice is cooked through.
