Skinny Girl Stuffed Meatloaf
Say hello to my Skinny Girl Stuffed Meatloaf—the ultimate high-protein, anti-inflammatory comfort meal for the season! What you’ll need:
2 Ibs fatty ground beef - preferably grass fed
2 eggs
3 scallions, chopped
1 large yellow onion, chopped
3 garlic cloves, minced
2 slices of toast, turned into breadcrumbs by grating
4 cups raw spinach
300g goat cheese (get the long roll and you should be good!)
2 tbsp tomato paste
a pinch of oregano
2 pinches of salt
Directions (makes 10 servings)
Add beef, eggs, scallions, onion, garlic, homemade breadcrumbs, tomato paste, oregano and salt to a large bowl. Gently mix together. Don’t over mix as this will make the meatloaf tough.
To another small bowl mix together your spinach and goat cheese. Set aside
Place about two-thirds of the meat mixture on the baking sheet and shape into a rough 9x5-inch loaf. Make a rough 7x3-inch well in the loaf, leaving a 1-inch border. Place the diced cheese mixture in an even layer in the well. Place the remaining meat mixture over the cheese and press into an even layer, completely sealing in the goats cheese.
Bake at 375°F until well browned all over and the centre of the loaf has reached at least 165°F, about 55 to 60 minutes. Let rest 15 minutes before slicing.
